Sweet Potato and Black Bean Chili

I love this simple, warming, wonderful chili.  The hardest part is cubing the yams/sweet potatoes

2 Sweet Potatoes, peeled and cubed

2 cans Black Beans, drained and rinsed

3 15 oz. cans diced tomatoes (I used 3 pints I canned fresh from my garden)

1/4 C Diced Onion

3 Tablespoons chili powder

Salt and Pepper to taste


Dump it all in the slow cooker (fits in my 4 Qt.) and cook on high for 4 hours
