Scrambled Grains with Mushrooms

1 C Quinoa (Dry)

2 C Water

2 T Olive Oil

1 lb. Mushrooms - sliced thick

1 Medium Onion - Chopped

1 Sm. Can (4.5 oz) Diced Green Chilies

2 Eggs

Soy Sauce


  • Place dry Quinoa and 2 cups water in sauce pan and bring to a boil.  Cover and simmer for 10-15 minutes while mushrooms cook.
  • Cook mushrooms in oil in skillet (5-10 min).  Add salt and pepper to taste
  • Add onion and chilies
  • Add cooked Quinoa to skillet
  • Add 2 beaten eggs
  • Stir until set
  • Drizzle with Soy Sauce


This is a great healthy quick meal for meatless Monday!
