Roasted Root Vegetables

Serves 4-6


1 Sweet Potato

2 Parsnips

2 Carrots

2 Turnips or 1 Large Rutabaga

1 Daikon Radish (or substitute other favorites - like squash)

Extra Virgin Olive Oil

Salt, Pepper

Herbs:  Rosemary, Thyme, or Sage


  • Preheat oven to 375 degrees
  • Wash, peel (if desired), and dice all vegetables into bite-sized cubes
  • Place vegetables in large baking dish
  • Drizzle with olive oil
  • Mix well to coat all vegetables lightly with oil
  • Sprinkle with salt, pepper, herbs and mix again
  • Bake uncovered for 25-35 minutes, stirring every 10 minutes, until vegetables are tender and golden brown


Any combination of your favorite vegetables will work.  I like to add wedges of onion as well.
